The high-profile project includes demolition of the existing bungalow adjoining Chewton Glen Hotel and Spa and the new build construction of an oak-framed cookery school together with associated parking and landscaping works.
It has 12 professionally equipped cooking stations with views over the specially designed garden. It employs 19 people and includes a tasting floor, a charcuterie bar, bakery and patisserie, as well as a 40-seater informal restaurant that features a pizza oven. There is also a chef’s table for private dining and celebrations, an outside seating area and private parking. It is hoped that the venue will provide an academy environment for students to develop skills and experience the restaurant and hospitality industry at its best.
The new building is constructed using a combination of exposed green oak frames and trusses, hidden steelwork, load bearing masonry and glass. Interfaces between the different construction materials offered challenges for the design team to solve to be able to achieve the clean final finish.
