The Kitchen Cookery School & Restaurant

This high-profile project included the demolition of the existing bungalow adjoining Chewton Glen Hotel and Spa, followed by the construction of a new oak-framed cookery school, along with associated parking and landscaping works.

The cookery school now boasts 12 professionally equipped cooking stations, offering panoramic views of the specially designed garden. Employing a dedicated team of 19 individuals and featuring a tasting floor, a charcuterie bar, bakery and patisserie facilities, as well as a cozy 40-seater informal restaurant complete with a pizza oven. Additionally, a chef’s table was incorporated for private dining and celebrations, while an outdoor seating area and private parking complemented the overall experience. The vision for the venue was to provide an academy-like environment where students could enhance their skills and gain firsthand experience in the finest aspects of the restaurant and hospitality industry.

The new building was meticulously crafted, combining exposed green oak frames and trusses, discreetly integrated steelwork, load-bearing masonry, and expansive glass elements. The interfaces between these distinct construction materials posed challenges that the design team adeptly resolved, ensuring a seamless and pristine final finish.
